....easy, breezy food for June

Summer is upon us

I was enjoying the asparagus and peas of spring so much this year that I was surprised when I suddenly started noticing ears of fresh sweet corn in the grocery store. I thought…surely not yet? I know our local crop isn’t in yet…but in Georgia and other southern states, the harvest is apparently in full swing. Summer, it seems, has arrived.

One of sweet corn’s best friends is zucchini. I used to teach classes that featured these two every summer. And there are many recipes on my blog that combine the two: pilafs, tarts, salads, pastas, risotto…as well as several vegetable medleys that I have paired with fish (but would be equally delicious with chicken, pork or beef). So it wasn’t a surprise that, when I noticed the corn, I began noticing the fresh and beautiful zucchini too. I admit that I still have a small container of asparagus in my fridge (it's hard to say goodbye for the year)…but I am rapidly incorporating my favorite early summer foods into my daily cooking, too.

As I was looking up the links for recipes on my blog that combine corn and zucchini, I was surprised to discover that there were no pork recipes. Besides the fact that I love pork, corn and pork are natural partners. I have shared recipes with pork combined with corn and many other things…but none that include zucchini. I guess I’m repairing that oversight this month.
